The Rancimat method is a standardized technique used to assess the oxidation stability of oils, fats, and fat-containing products. This method simulates accelerated aging by heating the sample and passing a continuous flow of air through it. As oxidation occurs, volatile compounds are carried into a vessel containing distilled water. The increase in water conductivity, caused by the accumulation of oxidation products, is continuously monitored.
The key result, known as the induction time or oxidation stability index (OSI), reflects how resistant the sample is to oxidative degradation. A longer induction time indicates greater stability and a longer shelf life.
