The Kjeldahl instrument is a specialized analytical device designed to measure nitrogen content in a wide range of sample types, using the well-established Kjeldahl method. This method involves three key steps: digestion, distillation, and titration. In the digestion phase, the sample is treated with concentrated sulfuric acid under heat, breaking down organic material and converting nitrogen compounds into ammonium sulfate. During distillation, the ammonia is released by alkalization and captured in a receiving solution. Finally, titration is used to quantify the amount of nitrogen present.
Since protein content is directly calculated from nitrogen levels, the Kjeldahl instrument is widely used in industries such as food and beverage, agriculture, animal feed, and pharmaceuticals. It offers high accuracy, reproducibility, and the ability to process multiple samples efficiently.
